Curry, soft serve and diamonds. (20/40/60 : Day 6)

Is there anything better after a sweaty workout than taking shoes and socks off and letting the tootsies air out?

Notice that I missing polish on my pinkie toe. It is impossible to keep polish on that toe when I’m running. I just painted these on Saturday.

Rewind. After work, I put on all the gear and headed to our newly reopened, remodeled gym.

I think you may never again see a picture of me without a Bondi Band.

Even though the gym was only closed for a week, I missed it dearly. They did such a good job reorganizing everything. They separated out the cardio equipment, which gave the free weights a ton of room to spread out. Much more comfy, even during the busiest times.

To celebrate the reopening, they had snacks laid out for the taking. And even though it isn’t the standard kind of food I’d buy, I’m in no position to turn down free food.

Did two sets of the Muscle and Fitness Hers starter guide and then 15 minutes of sprint running on the treadmill. Stretched and then headed home for some tootsie airing out and some good food. Post shower, pulled together this little bowl.

This is the fourth meal from my roast chicken from this weekend (we’re also having this for lunch tomorrow, which makes for 5 meals from one bird).

Curry Chicken Salad

1 1/2 c. shredded chicken
1 medium apple, diced
1/2 medium onion, diced
1 c. grapes, halved
1/2 c. mayo
1 T. mustard
1/2 t. curry powder
Salt and pepper
1/4 c. sunflower kernels

Mix it all together. Can be eaten immediately, but flavor is best if stored in fridge for a few hours before serving.

If you have never tried curry in chicken salad before, I highly recommend it! It doesn’t taste “curry-y” but it adds a nice dimension of flavor. Yum!

Served mine on a big, cushy bed of lettuce.

Topped it with a few more sunflower kernels.

And with the last few crumb-ckers from this box:

A little stale, but still yum.

Cut up a mater for a veggierific side.

And some club soda with lime to drink.

Nice post-workout dinner.

After dinner, I was craving something yum and fancy for dessert. My normal dessert is just a square of chocolate, but tonight I wanted to up the ante a bit.

Yeah, I went there.

Banana cherry soft serve with dark and white chocolate drizzle. YUM. If you have never made banana soft serve before, you are missing out! Couldn’t be easier. Throw a frozen banana cut into chunks into the food processor. Pulse until the texture of soft serve ice cream. DONE. I mixed a handful of frozen cherries into mine.

Ohhh, this was so good. And I had to keep reminding myself it is just fruit!

Switching gears, I got my wedding band back today! I didn’t write about this here, but last weekend I glanced down to admire my beautiful rings (which I do frequently) and noticed my wedding band was missing a diamond! Eek! Luckily it wasn’t too expensive to get it fixed, but it had to be at the jeweler for a week. I felt totally naked without it all week. So happy it is back!
