I’mmmmm baaaaaaaaack! And this time with 100% more Caesar salad.

Finally, finally, I am back. Back to me. My stomach is back to loving food again. YAY! So much so, I made overnight oats for breakfast this morning. On a weekday. Before work.

Overnight Oats

I am SO happy to have my tummy back. And just in time for pizza night! Food, I’ve missed you so.

But before we get into pizza, lets talk about Caesar Salad.

Who here loves Caesar salad?

(everyone raises their hand, because, well, who doesn’t love a good Caesar?)

Caesar salad is one of my favorites, but with the raw eggs and oil, the creamy dressing won’t be landing on any “World’s Healthiest Foods” lists anytime soon. But, I’ve got a Caesar dressing for you that healthifies the standard salad dramatically without cutting the taste factor one bit.

Caesar

Tofu Caesar Dressing

1/4 c. silken tofu
1 T. lemon juice
1/2 t. anchovy paste
4 T. grated parmesan cheese
2 T. mayonnaise
Dash Worcestershire sauce
1/4 t. dijon mustard
Salt and pepper to taste
1 small clove garlic, minced

Whisk all ingredients together. For a creamier dressing, pulse in a blender or food processor. Let chill in refrigerator at least two hours for flavors to meld.

Anchovy Paste

Yes, you need to actually use the anchovy paste. You’ll probably find it in your grocery store with the cans of tuna near the top shelf. Trust me, it won’t taste fishy.

Tofu

And the silken tofu gives the dressing a great creamy texture. I avoid soy mostly, but this is one case where I think it really fits the purpose. I’m sure you could also sub Greek yogurt, but I’ve never tried.

Caesar

Everyone in the bowl. You could do this is a blender or food processor for something VERY creamy, but that seems like a lot of work. My whisk is much less work.

Through the magic of food blogging, two hours chill time has elapsed. Toss with some lettuce.

Plop on some croutons and a bit more Parm and enjoy yourself without the guilt (not that you should ever feel guilty about food).

Of course, the main star of this show named Friday Night Dinner was the pizza.

The veg. Which would have also included an onion, but my allergy-ravaged eyes couldn’t handle the thought of onion tears.

And then cheese! Oh mountain of cheese, you are what I’ve missed the most during my virus-driven food absence!

And kick-ass it was.

Early to bed. Tomorrow morning brings another 5K. Oh, and I may just have some some pumpkin seeds to roast, too. Happy weekend, my friends. It feels fantastic to be back.

    • The oats ARE yummy! They are overnight oats, so the night before I mix together 1/3 c. oats, 1/3 c. plain yogurt, 1/3 c. milk, pinch salt, 1/2 t. vanilla, 2 T. chia seeds and sometimes some flavoring. In this bowl, it was cacao powder. Let it sit the fridge overnight. And then I usually top mine with banana soft serve, granola, and other fun toppings. It is so yummy and creamy! It is like breakfast dessert.

  4. Any ideas of vegetarian alternatives to anchovy paste? Please Amy x

    • Hmmm, this is a toughy. I’ve never tried any of these suggestions, so take them with a grain of salt, but mostly you are a looking for a brine-flavor (since you don’t really taste the fishiness). Try soy sauce or miso. Or maybe some chopped (good) black olives. Or maybe just throw in a handful of capers. Good luck and let me know if you try anything!

  6. This looks exactly like the recipe my mom makes for ceasar dressing, only shes never used the tofu! Anchovie paste truly is the KEY though! I loveeeee that stuff:) Now, I’m going to make her add tofu next time, thank you!!
