Technically, you can do either, but we like to put the meat on first. That way, when the cheese melts, it holds the meat and other ingredients down, making the nachos easier to eat!

What do I need to make these easy beef nachos?

To make these ground beef nachos, you’ll need:

  • Ground beef.
  • Tortilla chips or plantain chips.
  • Cooked black beans.
  • Red onion.
  • Shredded cheese. We like Monterey Jack, but you can also use cheddar cheese, pepper jack cheese, or dairy-free cheese.
  • Spices like ground cumin, garlic powder, cayenne chili powder, and salt.
  • Your favorite nacho toppings.

You’re going to brown the beef in a skillet and season it with the spices. Then just line a baking pan with parchment paper and spread out the chips. Top with the beef, beans, and red onion, and then sprinkle with cheese. Bake for ten minutes, and serve with your preferred toppings!

Nachos with toppings can be tough to reheatโ€”hot avocado and salsa aren’t great eats.

Nachos without extra toppings can be reheated, though! To get them back to their crisp, crunchy state, you’ll want to use the oven. Line a baking sheet with parchment paper or spray it with cooking spray. Spread the nachos out in a single layerโ€”if they are piled up, they will reheat unevenly. Bake at 300ยฐF for 5-8 minutes, or until warm.

Ingredients

  • 1/2 pound ground beef
  • 2 tablespoons cumin powder
  • 1 teaspoon garlic powder
  • 1 teaspoon sea salt
  • 1/4 teaspoon cayenne pepper
  • 1 small (5-ounce) bag tortilla chips or plantain chips
  • 1 cup black beans, drained and rinsed
  • 1 small red onion, diced
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup sour cream
  • 2 tablespoons unsweetened nut milk or water
  • 1 cup salsa
  • 1 large avocado, cut into chunks
  • 2 tablespoons fresh minced cilantro
  • Sliced black olives, pickled jalapeno, radish slices, and any other nacho toppings you enjoy

Instructions

  1. Preheat oven to 350°F. Line a large baking sheet with parchment paper, and set aside. Line a plate with paper towels, and set aside.
  2. In a medium-size saucepan over medium-high heat, brown the ground beef until cooked through. Add the cumin, garlic powder, salt, and cayenne, and mix well to combine. Transfer the meat to the paper towel-lined plate to drain.
  3. Spread the tortilla chips or plantain chips in a single layer on the prepared baking sheet. Top with the beef mixture, black beans, red onion, and cheese. Bake in oven for 10 minutes, or until the cheese is melted and the beans and onions are warmed through.
  4. While nachos are baking, whisk together the sour cream and milk or water until smooth. Set aside.
  5. Remove nachos from the oven, then top with salsa, avocado, cilantro, and any other toppings you like.
  6. Drizzle the nachos with the sour cream mixture. Serve immediately.
