I teased this drink a little bit on Tuesday, but trust me, it was so hard not to shout from the rooftops about how absolutely incredible, refreshing and delicious this recipe is!

When I was trying to think of recipes to use up my cucumber overload, I really wanted to try something that stepped out of the box. My thought process went something like this:

I need a Thirsty Thursday drink. And I should really use up some cucumbers. Oh yeah, there was a Gilmore Girls episode where they kept drinking cucumber water. Maybe I should do that. Nah. “Add cucumber to water” is not a recipe. What if I added sugar? Then it’d be like a cucumber-ade. Or maybe just add the lemon. Cucumber lemonade! GENIUS.

*Google it.*

Wait, people make cucumber limeade? That’s even genius-y-er!

The result is delicious. I really am not sure there is a better hot weather beverage out there.

Before diving into making the limeade, you’ll need to make simple syrup. Simple syrup is something good to always have around if you are a frequent cocktail and beverage maker. We just keep a bottle of it in the fridge at all times. To make simple syrup, just boil equal parts sugar and water until the sugar is completely dissolved.

This was so delicious it actually made me want to go to the gym and sweat a ton so I could come home and have a refreshing glass of cucumber limeade. While Babyface was drinking his glass, he kept saying “Mmm. This is so good.” after every sip. Can’t-stop-good!

 
Cucumber Limeade

Cucumber Limeade

Yield: 6 servings
Prep Time: 5 minutes
Total Time: 5 minutes

This Cucumber Limeade is so easy to make and incredibly refreshing!

Ingredients

  • 1 large cucumber, peeled and sliced into chunks
  • Juice of 3 limes
  • 1/2 to 1 cup simple syrup
  • Water

Instructions

  1. In a blender, add cucumber, lime juice, simple syrup and water to within an inch of the top.
  2. Blend until cucumbers are well chopped. Strain through a strainer.
  3. Serve over ice.

  1. OMG just tried your cucumber lemonade and I love. No cucumber will be safe in my house. Had to tweak it a little. I used lemon juice and agave sweetener and splendor. Really did not need to strain it but I did. I also put a spoon of the froth on top it made it cute and wash quite fun to taste.. Thank you for this quick and easy drink. Anymore simple drink recipes in your cupboard?
