Nothing bad ever comes from a pot full of caramelized onions.

I have such a hard time wrapping my brain around the fact that there are people out there that don’t like onions. I mean, I don’t plan on unwrapping an onion and eating it like an apple anytime soon, but onions add such an amazing complex layer of flavor to so many different foods. And onions can be taken into so many explosive and delectable culinary directions.

I’m a big fan of onions.

The “sauce” for this pizza is actually not a sauce all. It is the soft, sweet, gooey result of onions simmering in bacon grease and a touch of honey for about half an hour. After all that time, you are left with pile of deeply brown, sweet and soft-flavored onions (the photo below is a “before” shot, by the time the onions were done, the winter sun had already set). The sugary onions pair perfectly with the salty bacon and rich, decadent goat cheese. This pizza was so incredibly right that Babyface and I devoured the whole thing in one sitting. I promise you, this one will be in frequent rotation in our household.

Caramelized Onion, Bacon, and Goat Cheese Pizza

Yield: 1 large pizza
Prep Time: 30 minutes
Cook Time: 15 minutes
Total Time: 45 minutes

Caramelizing onions can be a simple process, but it takes a bit of patience. Make sure to caramelize on the lowest setting your stove will go on. Any higher than that and you risk burning the onions.

Ingredients

  • 8 slices thick-cut bacon, cut into 1/2" pieces
  • 2 medium onions, sliced (about 3 cups)
  • 1 tablespoon honey
  • 1 batch pizza dough (enough for a large pizza)
  • 4 ounces goat cheese
  • 1/2 cup shredded mozzarella

Instructions

  1. In a heavy-bottomed dutch oven, cook bacon pieces over medium-low heat until fat is rendered and bacon is crispy.
  2. Remove bacon from pan and let drain on a paper-towel covered plate.
  3. Add onions to bacon grease in dutch oven. Cook for 1-2 minutes or until onions are just tender.
  4. Add honey to onions and reduce heat to very low. Cover dutch oven and let caramelize, stirring occasionally for about 25-30 minutes, or until onions are very soft and very brown.
  5. Meanwhile, spread pizza dough into a pizza pan and preheat oven to 475°.
  6. When onions are finished, spread evenly over dough. Top with bacon pieces and crumble on goat cheese. Coat entire pizza in mozzarella.
  7. Bake at 475° for 15-17 minutes or until crust is cooked and cheese is browned and bubbly.

  7. We love onions in our house, especially caramelized onions. Even our 2 1/2 year-old gobbles them up. I’ve never been a fan of goat cheese though but I’m sure another cheese would be just as yummy!

  8. Huge onion fan!! It’s so weird how our tastes change as we age. I use to hate onions but husband is from Mexico and his family cooks onions in everything and even eat them plain off the grill! I got over my dislike and tried them one day, so glad I did because yum, Delicioso!!
