what i ate wednesday: low on words

Work is a little on the crazy side right now and I pretty much have no brain cells left after hours to write anything worthy of your amazing, intelligent minds. So I’m going to eat my peanut butter and jelly sandwich (dinner!) and post some photos for you of what I ate on Monday, and then probably fall asleep on the couch in front of an episode of SVU. I promise I’ll be back tomorrow with something worthy of your awesomeness. Maybe even a $500 (!) giveaway worth of awesome.

Purple smoothie made from rice milk, blueberries, a banana, flax seed, and wheat germ. Plus all my vitamins (watching Food Matters made me want to get back on the supplement train).

Morning Snack

I really need to figure out a way to take a more flattering photo of a hard-boiled egg.

Clear the fridge salad: greens, quinoa tabbouleh, hummus, roasted chicken, avocado. Plus a glass of iced green tea with mint.

Afternoon snack

There are many benefits to working from home. And one of them is being able to have a glass of wine when you are on the verge of throwing your computer out the window. Booze makes me a much more agreeable employee.

Fajita leftovers. Not made by me (thanks, Mama). Chicken, peppers, onions, refried beans, greens, avocado, lime juice, Greek yogurt on sprouted tortillas.

One, single, lonely, late-night Hershey’s Kiss, while I worked on freelance stuff.

The stats

What’s the best thing you’ve eaten this week?

Honestly, this peanut butter and jelly sandwich rocks.

Looks like a yummy day, but I have to admit that PB&Js are high on my list of favorite foods too. I did make a whole chicken in the crockpot this week and have been eating leftover chicken constantly. SO GOOD!
