what i ate wednesday: crazy busy

Do your eating habits change when you get busy? How about when you are stressed? I think it’s so interesting how people react differently to busy schedules. When I get crazy busy, I actually tend to forget to eat. And even beyond that, I totally miss my hunger cues. I don’t even realize I’m hungry until I break away to do something else (let Puppyface out, go to the bathroom, etc.). Only then do I realize I’m actually famished. I have a total mental block while I’m working, but as soon as the seal is broken, the hangry monster shows up.

I was crazy busy this past Monday (my Teux Deux list was packed) and I pretty much spaced eating. If it wasn’t for Babyface, I probably would have just nibbled all day until dinner. But husband to the rescue, so I at least got three solid meals in! And by the time I clocked out and was ready for dinner, I was starving! So I gave myself a nice big serving of yumminess for dinner.

  1. Breakfast: I started working way before dawn (after two cups of fully-leaded caffeinated coffee). I was totally in the zone and forgot about breakfast, but Babyface delivered this meal to me at my desk. He’s a good one, right? English muffin with two eggs, a slice of turkey and some cheese. Plus some plain Greek yogurt and some fruit on the side.
  2. Lunch: We got to around 2pm before either of us realized we should probably eat some lunch (Babyface was busy unpacking boxes and setting up our new office). I peeled myself away from my computer to make a new version of shrimp ‘n’ grits. It was very, very tasty! Recipe coming at you later this week.
  3. Dinner: Baked salmon with a giant pile of peach salsa and some farm stand green beans.

What’s the best thing you’ve eaten so far this week?

Do you eat crap because it’s easy (and you don’t have time to prepare something) or because you crave it? Because I totally have the first problem.

I don’t eat when I’m really busy or really stressed. However, if there’s stuff I should be doing but really don’t want to, I eat!

Best thing I ate this week was cake! Birthday cake, pavlova and ginger cake..which went really well with the pizza and cocktails!

Anyway, birthday indulgence over and it’s time to get back to healthy eating..

Shrimp and grits! I have had that on my mind and plan on making it for dinner tomorrow night. I am going to use your old recipe if I don’t see the new one come through before then. I was going to look for a recipe for them soon, so thanks.for reading my mind!

Your breakfasts always look so big, delicious, and filling! Question- do you eat it all at once, or spread it out throughout the morning? I always have issues where I’ll have a smaller lunch(usually egg white + english muffin + cheese) and be afraid to make it much more larger than that in case I “run out” of calories throughout the day and get hit with hunger pains later in the day. Lol. If that makes any sense. :)

I eat it all at once! I try to stay around 400-500 calories for breakfast and then I do 300-400 for lunch and dinner. Plus 100-200 for each snack. Although, this day, i didn’t have any snacks. So all my meals were a lot bulkier. :)

I know, right? He’s a good one. I’m a very lucky gal. He also does the laundry and cleans up the kitchen after I set off cooking bombs.

Yum! Those meals look awesome. I REALLY wish my boyfriend liked seafood/shellfish because I absolutely love it. It’s just too expensive to buy for only me (and then I’d have to cook two completely different meals, too). Oh, well… I’ll just have to live through you 😉
